Super Secret Recipe NOW OUT

I know I don't have many readers but I wanted to share a family secret with you as we begin the summer season.

PANCAKESAnd

Wait for it......
TOMATOESThis is a meal we always had growing up and we love it. I use my grandma's recipe for pancakes but you could use whatever you like. My grandma's recipe is super simple..
2cups flour (white or whole wheat pastry)
2 Tblspoons sugar
2tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
Then add water until it is the right consistency

And YES .... You do use syrup. Think of those yummy tomatoes as a fruit. Just imagine..... another use for all those wonderful tomatoes everyone will be getting from their garden.
Please try this even if it looks 'weird' to you. If you love tomatoes, you will love this. Plus it is a quick and simple dinner idea for those hot summer nights. I sometimes serve scrambled eggs and fruit too. ENJOY!!!

  3. Wow...tomatoes and pancakes - two things I would never ever think to put together! They ALSO happen to be two things I don't like, even when eaten "traditionally" LOL! I'm sorry, Frosty, but I don't think I'll be trying this recipe out. :p
I like my pancake batter in a waffle iron (and then smothered in peanut butter) and my tomatoes in salsa. :)

  5. Frosty, I'm sorry!
I should disclose fully that I am a pretty picky eater and have texture issues with a lot of foods. Pancakes are one of them - I can't get past the sogginess of them. That's why I do waffles instead, because I can make them crunchy! And tomatoes...squishy. *sigh* I'm really not a very fun dinner guest (or lunch...or breakfast).

  7. I love pancakes and and I love tomatoes, so I am excited to try this recipe, hopefully this weekend. Usually I eat my pancakes in the traditional manner (with butter and syrup), but my favorite way to eat them is with chili. Yup, you read that right - chili. Pancakes with chili and maple syrup is something I love that I hope YOU will try.
